DescriptionIn our newly designed premises on the 2nd floor we serve a delicious selection of vegan dishes exclusively from local, seasonal and organic produce. We also have started to offer an extensive range of vegan raw food. These dishes are not heated above 48°C in order to maintain their wholesomeness. Our raw food specialists Chad and Peter will introduce you to their exciting and tasty creations. For example, garden lasagna with black truffles and macadamia or beetroot ricotta ravioli with cashew cheese filling. New York Times, April 13, 2008 At the trendy vegan restaurant Saf im Zerwirk, nothing washes down the lasagna layered with cashew ricotta quite like a tarragon and tonic. The staff infuses the gin for this organic highball in-house with pear and citrus as well as tarragon.

And I say this as a complete Italian food snob who won’t even set foot inside an Italian restaurant that isn’t physically located in Italy.
