South America, take it away
The Prague Post, Jan. 3, 2008 Anděl’s cavernous temple to South American cookery places cod alongside tomato and scallion, ditching the rest. Many pieces of the fish itself are beautiful — toughened by acidic citrus until the flesh stands firm, opaque and resplendent. Dotted with kosher salt and cracked black pepper, the seasoning bursts from the bright background. Scallion draws forward the flavor of lemon, while slices of toasted bread calm a disturbing fishiness.
